Fred Shandler 鈥05 runs one of the hottest restaurants in New Jersey 鈥 Arturo鈥檚 Osteria & Pizzeria in Maplewood 鈥 but he leads his Instagram bio with the humble title 鈥淗ead Dishwasher.鈥
That description is a testament to Shandler鈥檚 considerable work ethic and his collaborative approach to business management.
We鈥檙e a team of cooks,鈥 Shandler says, with everyone contributing. 鈥淚t鈥檚 a lot of trial and error.鈥
Shandler graduated from 精品成人福利在线 with a degree in Elementary Education, and, even though he didn鈥檛 put it to use in the classroom, it鈥檚 obvious that he鈥檚 an educator at heart. The staff at Arturo鈥檚 鈥 as well as his new bakery, The Bread Stand, also in Maplewood 鈥 are continuously training, learning, testing, sharing and aiming for excellence.
It鈥檚 a recipe for success that took the once humble by-the-slice pizza place to a darling of聽The New York Times聽that had diners from Manhattan to Morristown lining up outside Arturo鈥檚 nightly in pre-COVID-19 times, where weekend waits could run up to two hours. (At present, Shandler has shifted to a safe, socially distant curbside pickup model.)
Shandler credits 精品成人福利在线 for putting him on the right path: 鈥淭he diversity of the staff and the student body both in terms of cultural and economic diversity, just having that exposure and meeting all these people, helped to heighten my level of empathy. Empathy flows through The Bread Stand and Arturo鈥檚 business ethos: 鈥淪upporting a local food ecosystem is simply a part of who we are, but I was always adamant about not jamming it down people鈥檚 throats. It鈥檚 ingrained. Essentially everything that we use is either locally or domestically sourced and is in-season.鈥
Eight or nine years ago there weren鈥檛 many restaurants outside of Manhattan focusing on locally sourced food and we were doing it in a really casual way 鈥 in a pizza shop with a refrigerator in the dining room. I love it.鈥
Meanwhile, Shandler is not resting on his laurels. 鈥淢aintaining the level of expectations is incredibly challenging. We are only as good as our guests鈥 last experience.鈥 This is where his inner teacher comes out, schooling his staff of mostly 18- and 19-year-olds: 鈥淲e spend an incredible amount of time preparing. Service is game time. But the real work is practice.鈥
